Shared kitchens need one standard

Every renter in a commissary signs up for the same promise: a clean, working kitchen when their block starts. Keeping that promise is hard when a dozen businesses pass through in a week, each with its own habits. San Jose Commercial Cleaning Co gives the kitchen operator a crew whose only job is the facility itself, so the standard does not shift from one booking to the next.

The operator sets the plan with us, not the individual renters. Our walkthrough covers the cook line, prep stations, cold and dry storage, the dish area, restrooms and lockers, and every task is assigned a rhythm: after each booking, nightly, weekly or monthly. Renters wipe down as they finish; after the last booking the crew deep-cleans and sanitizes every station.

Commissaries and rental kitchens in San Jose

San Jose’s commissaries and rental kitchens serve caterers, bakers, restaurant brands and food trucks, with hourly or dedicated space, cold and dry storage and truck parking.

Food trucks are a big part of the mix, since mobile vendors need a permitted base for prep, storage and cleanup. Meal-prep companies and packaged-food makers fill out the schedule, and the plan is written for whichever mix your kitchen hosts.

Prep stations and the cook line

After a booking ends, prep tables, cutting stations, overshelves and sinks are stripped of residue and sanitized. On the line, the range, flat-top and fryer surround are degreased along with the stainless wall panels, and control dials, oven handles and light switches get their own wipe.

Walk-ins, storage and dish

In the walk-ins, the crew wipes shelf rails and uprights, scrubs the gasket seals and door pulls and mops the floor once your team has pulled product off it. Dry storage racks and renter cages are wiped and swept, and every renter’s goods stay where they were left.

At the dish station, compartment sinks, the dish machine housing, drain boards and the pre-rinse area are scrubbed and the splash zone on the wall is washed. Staff restrooms, lockers and the break area get cleaned and refilled, so the people side of the kitchen keeps pace with the cooking side.

Floors, drains and grease-prone surfaces

Commissary floors carry grease and water from one end of the kitchen to the other. A degreasing solution goes down first, then a stiff brush or ride-behind scrubber works the tile, and the rinse water is pulled to the drains. Floor sinks and drain baskets come up for cleaning and go back in, keeping water flowing and odors away.

Certain places collect grease every week: beneath the line, behind fryers, the lowest shelves and the hand sinks. Those areas are on a detail rotation so buildup never becomes a project. Restorative tile and grout scrubbing is available through commercial floor care.

Tenant shift handoffs and inspection readiness

Handoffs are where shared kitchens go wrong. A crew can come in for a fast turnover once the early renters finish, return after the final booking for the full clean, or do both. Stations are inspected and sanitized and floors cleared, so the next renter starts without cleaning up after someone else.

When the county’s environmental health inspector visits, the whole facility is on view. Keeping every floor, wall, storeroom, drain and restroom on a routine puts the kitchen in the shape inspectors look for, and gives your staff solid footing on inspection day. Multi-brand delivery operations have a page of their own: ghost kitchen cleaning.

Schedules and what sets the price

A common pattern is a nightly visit plus a weekly list that cycles through the walk-ins, the walls and the drains. Kitchens with stacked bookings add a midday turnover. Late-night and weekend visits are available to match how your kitchen books.

Pricing is set by kitchen size, the number of stations and renters, how many turnovers you schedule and the floor and drain work involved. We tour the kitchen and send a written quote.

A few useful answers

Common questions.

Can the kitchen be reset between morning and afternoon renters?

Yes. A quick turnover between booking blocks can be added to the full clean that follows the last renter of the day.

Do you clean the dish area?

Yes. Compartment sinks, the dish machine housing, drain boards and the splash wall are scrubbed on every full clean.

Will the crew touch renters' stored food?

No. Your team or renters move product, and the crew cleans racks, seals and floors around what stays.

How does this help with county inspections?

The building’s floors, walls, storage, drains and restrooms stay on a routine, so the kitchen is in inspection shape whenever the county visits.
